Complex role of calcium in fruit softening was discussed. Low Ca content accelerates the fruit softening. Apoplastic Ca strongly affects the functions of plant cell walls and membranes. Cellular walls are the structures where the main calcium role is cross-linking with pectins what increases cell cohesiveness. Calcium ions maintain the membrane selectivity. In the symplast Ca++ ions alone or in complex with calmodulin influence the metabolical process changing the rate of fruit softening. However, the role of Ca-calmodulin complex in fruit softening in still not fully understood.
