Most suitable strain was B233 which gave maximum conversion efficiency of 0.458 gm per gm sugar and maximum dry cell weight of 11.46 gm per litre. The quality of baker's yeast obtained had good gasing power and short fermentation dough time of only 2 hours and 30 minutes which was similar to commercial instant yeast of Fermipan. The tested yeast also gave good flavor and texture. From good characteristics of B233, efforts were made to increase the productivity. The optimum nutrient requirement was 4 % reducing sugar, 2 gm per litre urea, 1.7 gm per litre diammonium phosphate, 0.0050 gm per litre vitamin B1 and 0.0100 gm per litre zinc sulfate. Optimum growth factors were temperature at 30 deg C, pH 6.0, 300 rpm agitation and 1 V.V.M. air flow rate.
