Quality assurance through quality management is the task of the fruit merchant and a challenge he has to meet. The important requirements tobe met at the production end are: 1. optimum timing of the harvest to ensure adequate ripeness and development of the produce coupled with optimum transportation properties; 2. suitable post-harvest treatment and processing, and 3. ecologically viable cultivation techniques. The selection of a suitable low-cost mode of transportation, i.e. the logistics, and a presentation ensuring optimum selling are further elements of quality assurance. Increasing importance is being attached to the internal quality of the products, i.e. to their organoleptic characteristics. This has been recognized by the import trade.
