The purpose of this study was to find out harvesting index of carrot for best quality root yield. Carrot root of Local Berastagi variety was used in this research. The carrot was cultivated by 10 x 15 cm of spacing, 15 tons of organic manure/Ha, 350 kgs of compound fertilizer (Rustica of 15:15)/Ha, and pesticides of Dithane M-45 and Decis 25EC as recommended dosage applied at weekly interval. The carrot root was harvested at age of 83, 90, 97, 104, 111 and 118 days after planting. Observations were conducted on physical characteristics of plant on harvest, yield and quality of root. The study used Completely Randomized Design with 5 replicates of a plot 1 x 2 square meters each. The results indicated that for good quality root yield, the harvesting should be done at 97 to 104 days after planting or at time when 3-5 of the leaves went to old stage (dark green yellowish). At such stage of plant age, the number of good root reached 45 to 55 percent, with 7.95-8.12 percent of TSS, 0.37-0.35 cm of hardness, and 4.04-4.13 cm of stem and diameter.
