The aim of this study was to find out harvesting index of cauliflower for good quality yield. Planting of cauliflower was conducted at farmer land at Rajapayung, Simpangempat, Karo, from December 1991 to April 1992. Physical and chemical observation were done at Berastagi Sub Research Institute for Horticulture Laboratory. Cauliflower of Berastagi local variety was cultivated at 40 x 80 cm of spacing, 20 tons/ha of organic manure, inorganic fertilizer 150 kg Urea + 150 kg TSP + 100 kg KCl/ha, and pesticides of Dithane M-45 and Decis 25 EC at recommended dosage and application. Picking started at 60 days plant old with three days interval up to 87 days plant age. Physical and chemical observations were done on harvested curd. Study used completely randomized design with 5 replicates of 20 cauliflower plants each. The results showed that plants were not possible to be harvested at the same time due to individual plant variation in development and bearing flower. The number of curd harvested was increased due to plant age but of variation in size and quality. Harvesting could be done since 60 days plant old (seedling was transplanted at 28 days old). At such plant age, 45 percent of the cauliflower beared curd but only 10 percent was a good quality. The best quality curd, 40-45 percent, was achieved at fourth harvesting of 69 days old planting. Physical characteristics of plant that yielded good quality of curd was bearing compact curds and its covering leaves were already open.
