Weight composition and chemical analysis of formed bouri and bolti fish [Egypt].

Bouri fish (Mugil cephalus) and Bolti fish (Tilapia nilotica) were obtained from El-Hamool, fish farm, kafr El-Sheikh Governorate in April, 1984. Bouri fish ranged between 27-31 cm in length, and between 150-290 gm. in weight. Bolti fish ranged between 16.5-29 cm. in length and between 110-300 gm. in weight. Moisture content of fresh Bouri and Bolti fish were 78.81 and 80.52%. The contents (on dry weight basis) were crude protein 84.68 and 87.56%, fat 10.56 and 6.19%, ash 4.35 and 5.81 % and carbohydrates 0.42 and 0,44%, respectively. Ratio between weight and lenghth for whole and parts of Bouri and Bolti fish were calculated. Amino acids present in the Bouri and Bolti fish were determined.
