Relations between function and the structure of muscles are described. It is emphasized every muscle represents an independent unit with a different composition of muscle fibre types and other structural units. Onesided crossbreeding aimed at lowering fat content in the body and speeding growth, especially in those species with a short reproductive cycle, results in unfavourable structural changes that cause disruption of homeostasis and deterioration of the meat quality post mortem. It is therefore recommended to revaluate further breeding keeping these aspects in mind.
