The possibility to use the system of pasture raising and fattening of lambs in our conditions were verified. There were 20 lambs of Tsigai breed in the experiment. They were on pasture together with their mothers. The group of 8 lambs was slaughtered as suckling lambs after 15.0 kg live weight. The other lambs were weaned. Further group of lambs was slaughtered at live weight of 25 kg after finishing the pasture fattening. Carcass dressing as well as chemical analyses of m.longissimus dorsi were performed. The growth intensity was quite high to the weaning, the highest value of average daily gains were 183 g. The gains decreased after the weaning to the end of the experiment achieving 106 g at that time (Table 1). Both groups of lambs achieved very high values of dressing percentage. These values were statistically significantly higher in suckling lambs (55.77 % vs. 47.28 % - Table 2). Statistically significant differences were noticed in representation of the individual tissues in the carcass. The percentual representation of the individual technological parts of the body was well-balanced for both groups (Table 3), as well as the content of total water, proteins and loose water. There was higher percentual fat content (3.22 % vs. 2.20 %) in suckling lambs. Differences in meat colour were statistically significant; slaughter lambs in 2nd group had markedly darker meat than the suckling ones (10.29 and/or 15.80 % remission - Table 4).
