Isocratic HPLC method was elaborated for the qualitative and quantitative determination of water soluble artificial food colours. It was established by the examination of the absorption spectra that the optimal wavelength for the photometric detection of amaranth, ponceau 4R, tartrazine and indigotine was 254 nm. The experiments showed that the peak territory was linearly proportional with the concentration of model solutions in the 150-350 mg/dm3 range, that is this portion was the linear part of the calibration curve. Two eluents were used in the method, and in this way the elution could be finished in 25 minutes (the eluent was changed in the 15th minute). The chromatography of properly prepared eluate of coloured fruit syrups showed that the method was applicable for the examination of real food samples as well. In all cases less than the allowed 800 mg/dm3 colour was found in syrups.
