Glycidyl-esters and 3-MCPD in food

The 3-MCPD esters are complex mixture of 3-MCPD-1-monoesters, 3-MCPD-2-monoesters and 3-MCPD-1,2-diesters, linked to various fatty acids. Analysis of intact individual 3-MCPD-esters is possible using LC-MS techniques. Because of the great number of individual substances, it has been found practible to determine the total 3-MCPD using the underlying alcohol component of all 3-MCPD-esters. The liberated free 3-MCPD can then be determined by GC/MS after being transferred to volatile derivatives of heptaluorobutyrylimidazole, acetone or phenylboranic acid. Practical methods of analysis of the glycidyl esters are currently investigated by several laboratories. the various glycidyl esters can be separated and analyzed using LC/MS methodology but alternative methods analyzing the total glycidyl content has been used. 3-MCPD esters standards (nine 3-MCPD-1-monoesters, nine 3-MCPD-1,2-diesters and eight 3-MCPD-2-monoesters) of high purity were prepared. In addition 5 internal standards were synthesized. Nine native glycidylesters and one internal standard were synthesized. NMR, MS and HPLC analysis of the products will be discussed.
