Effective quality improvement technology of agricultural crop (Allium sativum L.) is based on the definition of metabolic transformation of sulphur-containing compounds in garlic plants in condition of exogenous regulation by mineral elements. The technology consists in increase of alliin content and organic sulphides content in garlic bulbs for agricultural production with preservation of normal productivity. The use of sulphur fertilizers in dose of 125 kg per ha S and treatment by lipoic acid promote increase of alliin content and organic sulphides content in garlic bulbs that increase food value and pharmacological value of garlic bulbs twice.
