In the first part of this study, the effectiveness of natural antimicrobial substances ( nisin (0-500 ppm) and/or EDTA (20 mM), sodium lactate (NaL) (%2.0 and 4.0), grapefruit seed extract (GFSE) (0-300 ppm)] on the growth of pathogenic bacteria (S. enteritidis, E. coli O157:H7, L. monocytogenes 4b) were investigated in Tryptic Soy Broth (TSB). These experiments were conducted separately for each pathogen.

Bu çalışmada ilk aşamada Salmonella enteritidis, Escherichia coli O157:H7 ve Listeria monocytogenes 4b patojen bakterileri (5 log10 kob/ml) üzerinde doğal antimikrobiyal maddelerin (nisin (0-500 ppm) ve/veya 20 mM EDTA, sodyum laktat (NaL) (% 2,0 ve 4,0), greyfurt çekirdek ekstraktı (GFSE) (0-300 ppm)] etkinliği Tryptic Soy Broth'da (TSB) incelenmiştir. İn vitro deneyler her bakteri için ayrı setlerde gerçekleştirilmiştir.
