The thermal resistance of Alicyclobacillus acidoterrestris (DSM2498) spores in apple juice, orange juice and a model system (malt extract broth) were investigated in various brix (10 and 20), pH values (3.5 and 4) and temperatures (85, 90, 95 and 100oC). Brix and pH was not affected on decimal reduction time (D value) and inactivation rate (log (N/No)) in all three mediums.

Her üç ortamda da briks ve pH nın desimal azalma süresi (D değeri) ve inaktivasyon oranı (log(N/No)) üzerine etkisi belirlenememiştir.
