Interaction in skim milk of Lactococcus lactis and Listeria innocua under immobilized form in alginate beads

This study is focusing on the interaction in skim milk, of Lactococcus lactis subsp. cremoris and Listeria innocua in immobilized form, in alginate beads. Percentages of 50 percent Lactococcus,50 percent, Listeria; 75 percent, Lactococcus, 25 percent, Listeria; 75 percent, Listeria, 25 percent Lactococcus; and a proportion of 10sup(8) CFU/ ml of Lactococcus, 7,4.10sup(4) CFU/ ml of Listeria were proposed. A predominance of Lactococcus population was noted whatever the percentages used, with a growth, inhibition of Listeria population. The inactivation was not complete and Listeria innocua survived all the period of fermentation. The addition of disinfectant, the benzalkonium chloride to the milk, at different concentrations varying from 8mcg/ ml to 64mcg/ ml didn't show any effect on the kinetic of acidification nor on the growth of the two.
