Dressing percentage and offal production of various breeds of Zebu cattle slaughtered at the Peshawar abattoir

A research study was conducted to investigate the carcass dressing percentage and potential of different Zebu cattle and Friesian crosses (Fx) for beef at Peshawar's abattoir, Khyber Pakhtunkhwa, Pakistan during 2009. Data of 300 cattle were used for present study. Animals were first identified on the basis of breed, followed by sex and age. Body condition score (BCS) was estimated with fingers palpation and live weight of each animal was recorded on digital weighing scale before slaughter. The dressing percentage (DP) and the offal were weight separately. Breed, sex and age groups data, was entered in excel and analyzed through Genstat Discovery Edition 3. Female cattle were significantly (P less than 0.05) more (68%) slaughtered than males. Age group (37-55 months) was slaughtered in highest proportion. Most of the slaughtered cattle were of BCS 3-6. Mean DP of male and female cattle of the study breeds are Achai, (50.65 plus minus 0.06 and 50.04 plus minus 0.04) Dajal (55.72 plus minus 0.08 and 55.13 plus minus 0.05), Fx (52.99 plus minus 0.04 and 52.24 plus minus 0.04 ), Dhanni (50.60 plus minus 0.03 and 49.59 plus minus 0.71), Lohani (53.58 plus minus 0.06 and 53.40 plus minus 0.02) non-descript (54.00 plus minus 0.13 and 53.23 plus minus 0.03 ) and Sahiwal breed (52.05 plus minus 0.02 and 51.85 plus minus 0.14) respectively. Effects of breed and sex on DP are highly significant (P less than 0.001). Results suggested that the Dajal and non-descript and Lohanni cattle may be further explored for meat quality characteristics as they showed higher potential for meat.
