The filamentous microscopic fungi are an important part of the microbial population present on wheat grains. In the case of the creation of optimal conditions for their growth and multiplication, they can be the cause of deterioration of wheat grains during growth (field fungi) and during storage (storage fungi). The aim of this scientific monograph is to summarise the results of the research team of the Department of Microbiology that dealt with mycobiota of the stored wheat grains. The main aim was to point out the importance of individual fungal species or genera occurring on/in the wheat grains from the perspective of the raw materials quality, as well as from the point of view of safety (the production of mycotoxins).
