Study on pigment production of Monascus purpureus TISTR 3090 on adlay solid state fermentation

Study on optimal conditions for pigment production from Monascus purpureus TISTR 3090 on adlay solid state fermentation was carried out using Central Composite Design (CCD) with three parameters: moisture (x1: 50 60 and 70 percent), pH (x2: 5.5 6.0 and 6.5) and temperature (x3: 25 30 and 35 deg C) The result indicated that the most significant factors influencing pigment production were pH and temperature. The optimum conditions for pigment production was 58-63 percent moisture, pH 5.95-6.25 and 28-31deg C which pigment production was 105 OD units/g. dry weight at 10 days fermentation.
