Rosa rugosa appears important source of natural biologically active substances, possessing anti-oxidant activity. But immediate utilization of Rosa rugosa's fresh fruit is difficult because of specificity of hypanthium of the plant. Antioxidant properties of the Rosa rugosa along with lycopin, beta-carotene and tocopherols, contained in the plant, appear prerequisite of utilization of Rosa rugosa in food, pharmacological industry and cosmetology. Investigation of the efficiency and conditions of the process of extraction of carotenoids and ascorbic acid out of Rosa rugosa's hypanthium with the use of different solvents and their systems is presented in the article. The method of high-performance liquid chromatography (HPLC) has been used. Extraction of hydrophilic fraction of Rosa rugosa's hypanthium is analyzed. Influence of time of extraction on caratenoids' entrance during extraction of hypanthium with sunflower oil is evaluated. Output of lycopene and beta-carotene out of dry fruit of Rosa rugosa with application of different extracting mediums is analyzed. Practical application of the results of the research is substantiated.
