A complete random Block design with four replication experiment was carried out in shahrood(Bastam) and Damghan(Dibaj) area to study the Nitrate concentration in potato tubers with optimum nitrogen fertilizer and best yield with permitted levele Nitrate. Treatments were I- NO, without nitrogen fertilizer 2- NI, nitrogen fertilizer 30% less than soil analysis result 3- N2, nitrogen fertilizer equel to soil analysis result 4- N3, nitrogen fertilizer 30% more than soil analysis result with use Urea fertilizer. Phosphorus and potasium fertilizer were supplied from super phosphate triple and potassiumsolphate based on soil analysis result. Nitrogen fertilizer amount was divided in two partitions one was used planting stage and the other erthing stage befor flowering stage. Microelement fertilizer was added equely to all tretment according to proceduce of Soil and water reaserch institute. Effect of different level of nitrogen fertilizer ultilization in shahrood areae at 1% level was signgficant. The best yield result was in N2 treatment with 27.83 ton per Hectar. Effect of different levele of nitrogen fertilizer ultilization in Damdhan(Dibag) was nat significant but better yield result was N1 treatment Effect of different level of nitrogen fertilizer at Nitrate concentration in potato tuberes at 1% level was significant in both areae. N3 treatment had maximum Nitrate concentration between treatment in Shahrood and Damghan with 370 mg,/kg and 375 mg/kg dry mater respectively. Control treatment had minimum Nitrate concentration at 110 mg/kg and 118 mg/kg dry material respectively
