Continuous sterilization of fresh fruit bunches

Crushing and sterilization of fresh fruit bunches is examined using a double-roll bunch crusher and a pilot-scale batch steam autoclave. It is shown that the extent of nut breakage by the crusher is small and there will be no significant deterioration in oil quality due to bruising of the fruitlet mesocarp if the bunches are heated immediately after crushing. The sterilization process conditions required to achieve complete stripping of fruitlets from crushed bunches is significantly milder than that used for normal bunches. A process for continuous sterilization is presented based on the concept of sterilization of crushed bunches using steam at low pressure.
