In the conditions of the Republic of Belarus there were presented data on a comparative analysis of the biochemical composition of Jerusalem artichoke tubers (Helianthus Tuberosus L.), carrot (Daucus carota) roots, and table beet (Beta vulgaris). Studies have shown that the Jerusalem artichoke tubers contain a higher amount of dry matter in comparison with the carrot and beet. Tubers of Jerusalem artichoke content nitrate up to 10-13 times lower than roots of carrot and beet. There were observed no significant differences in sugar content. The studies revealed that the dry matter content in 100 g ща wet weight of artichoke was on 8.2 gram higher than in carrots and on 3.5 gram than in beet roots. Sugar content of Jerusalem artichoke tubers was on 46% higher that in carrot roots, but lower (on 22%) than in beet roots.
