The process of technology transfer includes external and internal factors, which might negatively or positively affect the implementation process of the adoption. A lot of companies and research centers were focusing on developing new technologies in the agricultural sector, without examining if and how these technologies may be adopted by producers. This is the first research effort that studies the behavior of the producers in terms of adoption of new and environmentally friendly technologies in olive oil production. The Technology Acceptance Model (TAM), widely studied in other fields, was used as a foundation of the research framework. The study involved the survey collection from the olive oil producers of Spain, Italy and Greece. First, a short overview of the olive oil production countries is given in Chapter 1, with a focus on the problems that occur with agricultural waste. In Chapter 2, the research reviews the previous attempts of economists to test TAM in the different areas and discusses the major problems of technology transfer and acceptance. In Chapter 3 the author explains the methodology of the research, proposing the adopted TAM specifically for the olive oil producers and research hypotheses. The results of the research are given in Chapter 4. Consequently, the author discusses the results of the survey study in Chapter 5, mentioning the limitations of the study and the conclusions.
