Технологические свойства зерна озимой пшеницы в агроклиматических зонах Тюменской области | The technological properties of winter wheat grain in the agro-climatic zones of the Tyumen region

Ruso. Исследования выполнены на образцах зерна урожая 2009-2011 гг. сортов озимой пшеницы Новосибирская 32 и Новосибирская 51, выращенных на сортоучастках 3 природных зон Тюменской области: подтаежной, зоны северной лесостепи и зоны южной лесостепи. Сорт Новосибирская 32 допущен к использованию в Тюменской области и является стандартным при оценке сортов государственного испытания. Сорт Новосибирская 51 включен в Государственный реестр селекционных достижений и допущен к использованию по Западно-Сибирскому региону. Оценку качества зерна проводили в соответствии с методиками национальных стандартов РФ. Установлено, что технологические свойства зерна изучаемых сортов зависели от условий выращивания. Лучшими показателями массы 1000 зерен (33,8 и 39,2 г) сорта характеризовались при выращивании в подтаежной зоне. В зоне южной лесостепи сорта отличались более высоким содержанием клейковины (26,7 и 27,4%). Пшеница сорта Новосибирская 51 превосходила Новосибирскую 32 по массе 1000 зерен и натуре зерна. По показателям физических свойств теста и хлебопекарным качествам изучаемые сорта в основном соответствовали уровню пшеницы-филлера, но в отдельные годы при выращивании в подтаежной зоне соответствовали нормативам ценной пшеницы.

The studies were conducted on grain samples (yield of 2009-2011) of winter wheat Novosibirskaya 32 and Novosibirskaya 51 grown on variety test plots of 3 natural zones of the Tyumen region: of the sub-taiga zone (Nizhnetavdinsky GSU), of the northern forest-steppe zone and of the southern forest-steppe zone The Novosibirskaya 32 variety is approved for use in the Tyumen region, and is a standard at assessment of varieties of governmental tests. The Novosibirskaya 51 variety is included in the State Register of Selection Achievements and approved for use across the West Siberian region. The grain quality assessment was conducted in accordance with methods of national standards of the RF. It has been found that the technological properties of grain of the studied varieties depended on growing conditions. The best indicators of the weight of 1000 grains (33.8 and 39.2 g) were characteristic for varieties grown in a sub-taiga zone. In the southern forest-steppe zone the varieties had higher gluten content (26.7 and 27.4%). The Novosibirskaya 51 wheat variety exceeded the Novosibirskaya 32 variety in the weight of 1000 grains and grain nature. By the physical properties of dough and baking qualities the studied winter varieties mainly met the level of wheat-filler, but in some years when growing in the sub-taiga zone met the standards of valuable wheat.
