Methods of estimation the effectiveness of the integrated system of product quality and safety of milk

Ruso. В статье обоснована необходимость формирования методических основ проведения всестороннего и объективного определения результатов внедрения систем менеджмента качества и безопасности продукции. Разработана и представлена методика оценки функционирования системы управления качеством и безопасностью молока, сущность которой заключается в комплексном определении ее эффективности на основе анализа производственно-финансовых показателей в результате внедрения (структура производства молока по сортам, темп роста молока экстра сорта, рентабельность и др.) и организации условий производства продукции (ответственность персонала за качество, принимаемые меры для устранения или минимизации отрицательного эффекта и др.). Новизна предложенной методики состоит в многокритериальном характере оценки (производственные, финансовые показатели деятельности предприятия, характеристики конкретных процессов производства и др.), что позволяет провести анализ качества продукции с учетом взаимосвязи с технологическими операциями, определить степень выполнения установленных требований к производственному процессу, разработать научно обоснованный план мероприятий по совершенствованию организации и системы управления производством молока

Inglés. The necessity of methodical foundations for comprehensive and objective determination the results of quality and safety management systems implementation are substantiated. The method of estimation of the management system of product quality and safety of milk is developed. This method is based on complex analysis of production and financial performance as a result of its implementation (the structure of milk production, the growth rate of milk extra varieties, profitability etc.) and organizational conditions of production (responsibility of the staff for the quality, the measures taken to eliminate or minimize the negative effects etc.). The novelty of the proposed technique consists in the multicriterial character of estimation (industrial, financial performance of the enterprise activity, the specific characteristics of the production processes, etc.) that allows to carry out the analysis of products quality taking into account interrelation with technological operations, to determine the degree of performance with the established requirements to the production process, to develop science-based plan of measures on perfection of the organization and management system of milk production.
