Change of maintenance of meat and lard in the carcasses of pure breed and hybrid of young pigs depending on his before-slaughter mass

В статье рассматриваются особенности формирования мясных качеств при повышении убойных кондиций у чистопородного и помесного откормочного молодняка, полученного с участием пород отечественной и зарубежной селекции. Установлена положительная корреляция высокой степени живой массы животных перед убоем с содержанием как мяса, так и сала в тушах молодняка всех изученных сочетаний. В то же время, связь предубойной массы с удельным весом в туше мышечной ткани была отрицательной и выраженность ее менялась в зависимости от сочетания. Также варьировала степень корреляции удельного веса в туше сала с предубойной массой. При введении в схему скрещивания на заключительном этапе мясных пород канадский йоркшир, белорусский дюрок, а также йоркшир, ландрас и дюрок немецкой селекции степень связи как содержания мяса, так и сала в тушах с предубойной массой животных понижалась. Однако, хотя с повышением убойных кондиций от 95–105 (в среднем 100) до 116–125 (в среднем 120) кг у животных всех подопытных групп отмечалось снижение содержания в тушах мяса и повышение содержания сала, у чистопородного молодняка БМхБМ и помесного молодняка сочетаний БКБxКЙ, (БКБxБМ) xБД, (БКМxБМ)xНД и (БКБxБМ)xНЛ по мере повышения живой массы мышечная ткань продолжала достаточно интенсивно расти при ограниченном росте жировой ткани.

The article examines the impact of forming of meat internalss are examined at the increase of for slaughter standards at of pure breed and hybrid of the fattening of young pigs got with participation the breeds of home and foreign selection. Set the cross-correlation of high degree of living mass of animals is set before a slaughter with content, both meat and lard in the carcasses of young pigs of all studied combinations. At the same time, the relationship of pre-slaughter weight with muscle tissue specific gravity in the carcass was negative and its severity varied depending on the combination. Also, the degree of correlation of fat specific gravity in carcass varied with pre-slaughter weight. At introduction in the scheme of crossing meat breeds - Canadian Yorkshire, Belarus Duroc, as well as Yorkshire, Landrace and Duroc of German breeding - at the final stage degree of relationship as the meat content, and fat in carcasses with animals pre-slaughter weight decreased. However, although with the increase of for slaughter standards from 95–105 (on the average 100) to 116–125 (on the average 120) kg for the animals of all experimental groups were marked decline of content in the carcasses of meat and increase of content of lard, at the of pure breed young pigs of BM×BM and hybrid of young pigs of combinations of LWBxJK, (LWBxBM)xDB, (LWBxBM)xLG and (LWBxBM)xDG as far as the increase of living mass muscular tissue continued intensively enough to grow at a limit height fatty.
