An increasing demand for traditional products and favorable incentive policies in some segments stimulate agricultural producers to increase sizes of their herds and their product range. Small and medium-sized producers can react to demand oscillations in a short period of time with an adequate range of products. Variations in milk quality (seasonal variation of milk fat and protein content) significantly affect the consumption of milk needed for the unit of product and also affect the final price of the product, which can make it difficult to sell. Goodoriented production - good selection of products on offer with the minimization of waste – contributes to the sustainability of the production itself
