The olive oil industry generates huge amount of wastes which management has not been completely solved. In Spain the main waste called alperujo is produced as an average of 4,8 million tons/year the last six years. Currently the utilization of alperujo is focusing on the extraction of the added value components, mainly the phenolic compounds. During the olive oil extraction only 2 per cent of these phenols are in the final oil, the rest remaining in the alperujo. Thermal treatments are starting to be used in the industry in order to obtain a rich source of phenols and sugars with bioactive potential for their recovery. In the present work, a study to improve this extraction by combining some thermal treatments (25, 50, 90, 120, 150 and 180 degrees C) with the novel use of Deep Eutectic Solvents (DES) has been carried out. The use of DES such us EU 6 (Choline chloride — 1,4 Butanediol) and EU 21 (Choline chloride — Glycolic Acid — Oxalic Acid) in combination with temperature significantly increased the recovery, not only of phenols but also of sugars (up to 28 mg per g and 234 mg per g of dry alperujo, respectively, using EU21) decreasing the required temperatures. These results support the promising application of DES for the recovery of phenols and neutral and acid sugars, being more technically and environmentally viable than the use of organic solvents. The utilization of DES helps to reduce operating costs and the degradation of some compounds by decreasing the temperature
