Characteristic of water living resources of water bodies situated near Moscow by safety and quality indicators

Recently the intent attention is paid to sports and recreational fishing . Therefore it is necessary to watch safety and their epizootic condition carefully, as well as in the system of the Federal Fisheries Agency the state monitoring of water living resources and their habitat is carried out by scientific research institutes subordinated to the Federal Fisheries Agency, which regions of responsibility are distributed according to the order . FSBSI «VNIRO» investigates internal water bodies, among which are water bodies of Moscow region . Moscow region including Moscow is one of the popular places for fishermen . This article presents the results of research of water living resources of Moscow region water bodies, such as Ivankovsky, Pestovsky, Pirogovsky, Mozhaisk and Ozerninsky storage ponds . The results of safety indicators research haven’t reveal excess of liminal values . We defined protein content, fat, amino-acid composition of protein, fattyacid composition of lipids, and also their fractional structure . The research results of proteins’ amino-acid composition have shown that it is presented by replaceable and irreplaceable amino acids . The research results of lipids’ content have shown that all species of the examined fish belong to the low-fat . The lipids’ fractional structure research have revealed that examined fish species contain: phospholipids, monoglycerides, diglycerides, sterols, free fatty acids and triglycerides . Research of lipids’ fatty-acid structure of specified fish species have shown the presence of essential (irreplaceable) fatty acids . In accordance with the above mentioned it is clear that examined water living resources of Moscow region water bodies are problem-free on safety indicators and their usage in food won’t do any harm to human organism . The research of food and biological value of mentioned fish species have shown that they are a full value source of biogenic substances, as well as the use of this fish is not only safe, but is also healthy
