Piyasadaki farklı yoğurt türlerinin aflatoksin m1 düzeylerinin belirlenmesi | Determination of the aflatoxin m1 levels of commercial yogurts

Aflatoxin is a mycotoxin which is usually produced by Aspergillus. Aflatoxin M1 is the hydroxylated derivative of Aflatoxin B1 and it is found in milk and milk products. Aflatoxin M1 (AFM1) has been proven to cause carcinogenic and hepatotoxic effects in humans, and therefore the maximum levels allowed in various milk and milk products have been determined. In Turkey. this amount is 50 ng/kg for yoghurt. In this study, it is aimed to compare Aflatoxin M1 levels in commercial yogurts sold in Ankara. AFM1 levels of the samples were measured by ELISA. Yogurt samples, 28 normal, 12 strained, 8 probiotic, 8 organic and 17 fruit yogurts, were purchased from supermarkets and hypermarkets in Ankara. The lowest mean AFM1 level was observed in probiotic yogurts (12,43±1,35 ng/kg); The highest average level of AFM1 was found in organic yogurts (18,43±8,11 ng/kg). As a result of statistical analysis, there was no significant difference between mean of AFM1 levels in different yogurt samples (p> 0.05). There is no sample exceeding the maximum tolerable level (> 50 ng / kg) determined for yogurt in Turkey. The high level of AFM1 in organic yogurts is thought to be due to the lack of pesticides and fungicides in organic agriculture. The result of the study shows that probiotic bacteria may succeed in detoxifying Aflatoxin M1 in yogurt.
