The potential of canned production in Republic of Moldova (RM) and some critical points in the food chain is examined, specifying activities to avoid weak links in manufacture. Are dotted some research and development activities directed toward improving the quality of products obtained as a result of processing agri-food raw material and diversify the range of food. Along with this are stipulated and some modern laboratory techniques and analytical methods for assessing the quality and the innocuity of food.
