A correlation between the incidence of black heart symptoms electrical conductivity and endogenous calcium levels was observed in both Kew and Mauritius variety pineapples subjected to storage at 10° C for 14 days. Low levels of calcium were observed in Mauritius fruits along with high incidence of the disorder, while high levels of calcium were observed alongside low incidence of the disorder in Kew. Significant differences in free and bound calcium levels were observed in core and flesh samples before and after storage in Mauritius pineapples while core and flesh samples of Kew showed no such differences. Electrical conductivity in both regions was significantly higher in Mauritius variety after storage, compared with Kew, where conductivity was significantly higher only in the core.
