Assessment of the genes that affect carcass characteristics, meat yield and quality and the association of the genes with yields in Holstein bulls

The aim of this study was to investigate the bovine CAPN1- G316A, CAPN1- V530I, CAST- S20T, LEP- A80V and GHR- S555G polymorphisms frequencies and to identify individual and/or interaction effects of these polymorphisms on the live weight, carcass characteristics and meat quality of Holstein bulls.In this study 400 Holstein bulls slaughtered at age 14-21 months were used. PCR-RFLP method was carried out from blood samples for genotyping. Live weight, hot and chilled carcass weight, dressing percentage, back fat thickness, MLD area, marbling score, pH, meat color and carcass measurements. Meat quality parameters were determined from 50 bulls that was randomly selected.CAPN1- G316A polymorphism significantly affected live weight, hot and chilled carcass weight, dressing percentage, back fat thickness, inner chest depth, rump height (p<0.05), MLD area, carcass length, rump width and meat texture (p<0.01); CAPN1- V530I polymorphism significantly affected L* value and cooking loss (p<0.05) and meat texture (p<0.001). CAST- S20T polymorphism was significantly associated with live weight, inner chest depth and b* value (p<0.05). GHR- S555G polymorphism was significantly affected pH, a* value and cooking loss (p<0.01). CAST- S20T x LEP- A80V interaction was significantly associated with dressing percentage; CAPN1- V530I x GHR- S555G and LEP- A80V x GHR- S555G interactions were significantly associated with pH and CAPN1- G316A x CAPN1- V530I and CAPN1- V530I x CAST- S20T interactions were significantly associated with rump width (p<0.01).Consequently, the polymorphism effects that were inspected may be used for selection programmes.
