Image analysis of beef in Wagyu-sired bulls from an extensive farm and correlation with carcass and meat quality traits

We presented results from image analysis of pictures of cuts of m. longissimus lumborum et thoracis (MLLT) (Ribeye), m. spinalis dorsi and intermuscular fat from the parts between these muscles (Seam (kernel) fat). We evaluated size of area ratio of these muscles and percentage of intramuscular fat (marbling) in each muscle separately. The pictures were taken between 8th and 9th rib in non-castrated Wagyu-sired bulls - crossbreds with Charolais, Blonde d´ Aquitaine, Simmental reared on a farm with extensive fatteningsystem. Mean value for area ratio from the picture was 60.37 % and 31.77 % for MLLT and m. spinalis, resp. However, area ratio of m. spinalis to MLLT reached to 78 % of the MLLT. Mean value for area ratioof intramuscular fat was 7.87 % of the picture. Average value for intramuscular fat was 0.92 % in MLLT and 1.69 % in m. spinalis. We found out significant correlation between fat values obtained from image analysis and chemical analysis and carcass analysis. There were found no significant correlation between values for area ration of muscles and values for cuts (sirloin, chuck).
