Roadmap for tomatoes’ fruit choice

Tomato (Solanum lycopersicum L.) is a widely consumed vegetable in Latvia. Consumption of tomatoes is associated with decreased risk of chronic diseases. Tomato taste varies depending on the genetics of variety and the ratio and quantity of different chemical compounds, mainly acids and sugars. One of the consumers' most significant challenges is choosing tasty tomatoes based on their appearance. This study aimed to determine how to choose tasty tomatoes based on fruit size and colour. The chemical composition and taste index was determined in 45 tomato cultivars cultivated in the greenhouse. Red, pink, orange, brown, yellow, and bi-colour tomato fruits were used for analysis. The smaller tomatoes are recommended for consumers as tastier due to higher soluble solids content. Red tomatoes have the lowest dispersion of the relative taste index, which means the slightest chance of buying unpalatable fruit; however, bi-coloured tomatoes are the tastiest.
