VFA and non-VFA production ability of Lactobacillus species isolated from mulberry silage (Morus alba)

In the present study, VFA and non VFA production ability of four Lactobacillus Species (i.e. Lactobacillus farraginis SL22, Lactobacillus pentosus SL23, Lactobacillus brevis SL33 and Lactobacillus acidipiscis SL44) isolated from Mulberry silage (Morus alba) was investigated. Isolates were cultured in MRS broth at 37°C for 24 h and at the end of fermentation, samples were centrifuged and the respective supernatants were used for detection of fatty acids by gas chromatography. Results show that lactic acid production was highest, with maximum production obtained in L. pentosus SL23 (533.97 mmol). Highest production of acetic and succinic acids were obtained in the L. farraginis SL22 (106.21 and 39.27 mmol, respectively). Based on the production of organic acids, particularly lactic acid, it is suggested that L. pentosus SL23 could be a potential probiotic.
