The effect of temperature and precipitation on the average oil and protein content of rapeseed is analyzed in the paper.The multi-annual results (2007-2018) of the quality of rapeseed seed as raw material for further production were obtained from „Victoriaoil”, Šid. Oil and protein content is a quantitative trait and is conditioned by both environmentalfactors and genotypes and their interaction. Weather conditions during the growing season of rapeseed production,especially temperature and rainfall, have shown a significant impact on the oil and protein content of the seed. The oilcontent of rapeseed varied between 40.73-44.38%, depending on the genetic variability and the year of testing, with thehighest average value in the year 2016 and the lowest average value in 2007.In addition, when observing the average oil yields for the period under review (2007-2018), a linear increase wasobserved, the oil content statistically significantly increasing annually by about 0.28%. During May, high seed oil accumulations took place and high temperatures had a negative effect on this process. Protein content was highest in the2014 and 2015 seasons, which were characterized by high rainfall during the month of May. In May, the absence of aclear influence of temperature on protein content was observed. Moderate temperatures are necessary for the formationof high protein content because too high or low temperatures lead to a decrease in protein synthesis in rapeseed seed.
