Inglés. The purpose of these studies was to establish the features of the structure of muscles and their relationship to the quality of meat in the Aberdeen-Angus bull calves of different body types. To conduct the experiment, 2 groups of steers with 14 heads of steers each were formed from the offspring of 4 large bulls and 3 small bulls of the Aberdeen- Angus breed. The first group consisted of steers descended from large, tall-type breeding bulls, and the second group consisted of steers descended from small, compact-type breeding bulls. For the control slaughter at the age of 18 months, 3 most typical animals were selected from each group. In order to study the features of the development of the musculature, dissection and weighing of individual muscles of the left semi-carcass were carried out. It was found that in the animals of the first group, the muscles of the forelimb and the muscles connecting it to the trunk are better developed, and in the second group, the muscles of the hind limb and the muscles of the vertebral column are better developed. The correlation of the mass of the humerus with the mass of individual muscles is high (r = 0.625 to 0.797). The correlation of the scapular (r = 0.237 to 0.362) and femoral (r = 0.272 to 0.478) bone mass is significantly lower. There was also a fairly high correlation between the mass of the muscles and the mass of the prepared muscles. The results of the research suggest that it is possible to use the mass of individual muscles and muscle groups to judge the total meat content of the carcass. The greatest interest in this regard may be the great lumbar muscle, which is usually separated from the carcass (tenderloin), the semiperembranous adductor muscle, the biceps femoris muscle, the semitoneal muscle, the calf muscle, and some others.

Ruso. Целью данных исследований было установление особенностей строения мускулов и их связей с качеством мяса у бычков абердин-ангусской породы разных типов телосложения. Для проведения опыта из потомства 4 быков крупного и 3 быков мелкого типа абердин-ангусской породы было сформировано 2 группы бычков по 14 голов в каждой. Первая группа состояла из бычков, происходящих от быков-производителей крупного высокорослого типа, вторая группа - из бычков, происходящих от быков-производителей мелкого компактного типа. Для проведения контрольного убоя в 18-месячном возрасте было отобрано из каждой группы по 3 наиболее типичных животных. С целью изучения особенностей развития мускулатуры были проведены препарирование и взвешивание отдельных мускулов левой полутуши. Установлено, что у животных первой группы лучше развиты мускулы передней конечности и мускулы, соединяющие ее с туловищем, а во второй группе мускулатура задней конечности и мускулатура позвоночного столба. Корреляция массы плечевой кости с массой отдельных мускулов высокая (r = от 0,625 до 0,797). Корреляция массы лопаточной (r = от 0,237 до 0,362) и бедренной(r = от 0,272 до 0,478) кости значительно ниже. Также была получена довольно высокая корреляция между массой мускулов и массой отпрепарированной мускулатуры. Результаты наших исследований говорят о возможности использовать массу отдельных мускулов и мускульных групп для суждения о полной мясности туши. Наибольший интерес в этом отношении может представлять большой поясничной мускул, который обычно отделяется от туши (вырезка), полуперепончатый с приводящим мускулом, двуглавый мускул бедра, полусухожильной мускул, икроножный мускул и некоторые другие.
