Influence of intensive mineral fertilization on chemical composition and technological properties of high yielding spring wheat varieties

Investigations on the influence of mi2048neral fertilization on the physical characteristics, chemical composition and technological value of grain of 4 spring wheat varieties were carried out in 1981-82 and 1984. On the basis of the results obtained in these experiments it has been found that mineral fertilization, especially nitrogen doses caused changes in coarseness and glassiness of grain. High nitrogen fertilization increased total output of flour but only in some varieties. The total protein content, non-protein N content and changes in the contents of four fractions of proteins increased under nitrogen fertilization in all varieties. The indirect estimation of baking properties, obtained on the ground of wet gluten content, activity of amylolytic enzymes and farinograph characteristics of dough has proved favourable effect of nitrogen fertilization for the majority of the determined feat
