Effect of severe infection with Septoria nodorum on spring wheat quality

The effect of Septoria nodorum Berk. infection on wheat quality was studied in two cultivars, susceptible Taehti and moderately resistant Kadett, using artificially induced disease conditions. Protein content and the rheological properties of the dough were determined and test baking was performed. Severe infection had positive effects on the protein content and the rheological properties of the dough of susceptible Taehti. Specific loaf volume and the overall loaf quality score were considerably high for inoculated Taehti samples. Severe infection affected only slightly the protein content and other quality characteristics of Kadett. The positive effects of severe infection on wheat quality are discussed. It is suggested that the economic loss caused by severe infection is primarily related to yield reduction.
