Plums as a row material for juice production and modification of technological procedure

Differences in the fruit colour were found between the investigated myrobalan (Prunus cerasifera L.) biotypes - there were fruits containing anthocyanins and those containing carotinoids. A specific characteristic of the chemical composition, as compared with the other plum varieties, is an exceptionally high acid content. There are obvious differences in fruit size; the average weight of a plum fruit was from 4.7 to 12 g. The stone percentage varied depending on the fruit size, being from 5.9 in larger to 14.5 in the smallest fruits. Both biotypes are suitable for juice production. An idea occurred, based on these experiments, to modify in some aspects the juice production technology.
