Some chemical and physical characteristics of yellow nutsedge oil (Chufa) were studied. The oil content, specific gravity, refractive index, acid value, saponification value, and iodine value were: 23.99, 0.919, 1.4668, 9.07, 190,58 and 103 respectively for the ungerminated sample and 15.74, 0.926, 1.4632, 5.97, 216.31 and 98.5 respectively for the germinated one. The fatty acid constituents of yellow nutsedge were identified. The following fatty acids showed higher values i.e., C 8:1; 21.16% and C 17:0; 12.69 in the ungerminated sample.
