Processing and utilization of cassava in the Philippines

Of the total cassava production in the Philippines, about 35 percent is used for human food, 31 percent for industry and 33 percent for animal feed. The total projected demand of cassava for the year 2000 is estimated to be over 3 million t of fresh roots. Current utilization of cassava is categorized into (a) fresh roots and traditional food products, (b) dried cassava pieces/chips, and (c) starch and glucose. As food, cassava roots are traditionally boiled or steamed and consumed as a rice and maize extender. Traditional food products are produced by household processors. Feed millers are the main users of cassava dried chips. There are 11 operational cassava starch factories with milling capacities from 90 to 500 t fresh roots per day. These factories operate below capacity due to insufficient supply of raw material. Over 0.8 million t of cassava roots are needed for all factories to operate at full capacity. Research on cassava processing and utilization has been focused on postharvest storage of the fresh roots, development of food products and feed formulations, and development/improvement of the related equipment. The following products have been developed from cassava: (a) fried chips/sticks prepared from fresh roots, (b) baked, puffed and steamed/boiled products from cassava flour and dried pieces, and (c) dried cubes. Product development includes improvement of the process and design/modifications of the equipment. Pilot projects have been set up for technology evaluation and dissemination. The use of cassava chips for animal feeding has been proven technically and economically feasible. Some studies exist of the uses of cassava starch for industrial products. Future cassava research priorities in processing and utilization are discussed.
