Sweet sorghum (Sorghum bicolor), Jerusalem artichoke (Helianthus tuberosus) and root chicory (Cichorium intybus) are aside from sugar beets (Beta vulgaris) suited for the production of sugars. In the Federal Republic of Germany, about 30.000 t of beet sugar (saccharose) are sold as a chemical feedstock to produce a diversity of products like organic acids, glycerol, vitamins and others, yearly. Research in the field of sugar chemistry currently extends the scope of sugar derivatives and new markets. The potentially useful crop discern from sugar beets with respect to the composition of sugars.
