The electric stimulation effect on the heavy metal content in meat

The degree of alteration of the heavy metal content in meat is studied during low voltage electric stimulation of the meat by stainless steel electrode. The electrodes are introduced in the neck and the leg muscles. The iron, chrome, copper and zinc content in samples of the meat round the electrodes is analyzed. The authors determine that the electric stimulation does not change the copper and the chrome content. The increased quantities of iron and zinc are below the maximum permissible norms for these metals.
