A broad overview is provided of the California vegetable industry as observed during a recent tour of the area in 1994. Particular reference is made to both whole and fresh-cut lettuce production and marketing. Growing of lettuce occurs on a grand scale and farms are characterised by their large size and huge volumes. In recent years an oversupply of lettuce has lead to low prices and consolidation of the industry into even larger properties and fewer growers. The problem of over-supply has been alleviated somewhat through an increased consumption of fresh-cut salads.
