Varietal differences in nitrates content in carrot juice

Nitrates content (mg NO3-/l) in carrot juice in seven carrot varieties (Daucus carota) was studied in two analyses. The first analysis was carried following the harvest, the second analysis was carried out after 120 hours of storage. Determination of NO3- ions was performed potentiometrically. Statistically significant differences were found between average values of nitrates content in tested cultivars in particular years as well as for the whole period under study. Variability of nitrates contents within a cultivar was high in all the years. The Olympia cv. as the cultivar with the trend to increased cumulation of nitrates in the roots and with the highest variability of measured values of nitrates within the cultivar. No statistically significant differences were found between two analyses. The effect of years on the nitrates content in carrot juice was statistically significant.
