Changes in firmness of apples during maturation on trees

Quantities of subepidermal injury of tissue, deformation of tension of skin, deformation tension of flesh, module of elasticity, module of toughness were derived from a deformation curve. The dynamics and significance of changes during maturation were investigated. Statistically significant changes among cultivars during maturation were found for cultivars Golden Delicious, Angold, Florina and Rezista. Parameters of subepidermal injury of tissue, firmness of skin and flesh and module of toughness expressed as a deformation energy for attaining the limit of firmness of skin during the time of loading by external force give statistically significant differences among cultivars during maturation of the fruit and between developmental trends in different cultivars. On the contrary, the module of elasticity is not a reliable criterion of developmental trend during maturation.
