The degree of raw potato starch degradation by the amylolytic lactic acid bacteria, Lactobacillus amylovorus DSM 20 531 and Lactobacillus plantarum C KKP/788/p, was tested. Growth of the bacteria in culture medium containing raw potato starch as the sole source of carbon was examined. Cultured on raw potato starch the amylolytic strains of bacteria, to be compared, produced and secrete enzymes of alpha-amylase and glucoamylase activity
