The phosphorus content, amylose content, reducibility, water binding capacity, water solubility and transmittance of water pastes and the pasting characteristics of water dispersions of Ultra Tex 2, Instant Clearjel E, Batter Bind SC, Colflo 67 and Purity D were determined. It follows from the results that the investigated starches differ in their properties. Depending on their source of origin, they are characterized by different phosphorus and amylose contents
