Changes in chemical hot pepper fruit composition depending on cultivar and number of harvests

The 1988-2000 studies aimed at evaluating the dry matter, vitamin C, total sugar and capsaicinoides contents in fruit of four hot pepper cultivars (Bronowicka Ostra, Cyklon, Orkan and Tajfun) depending on the number of harvests: multiple, double or single. A significant impact of cultivar properties on chemical composition changes in hot pepper fruit was found. Hot pepper fruit originating from double and single harvests rather than from multiple harvest contained more dry matter, vitamin C and total sugars
